The Truth About The Incredible, Edible Egg YOLK!
My Girls get Alfalfa-Hay and High-Protein Naturally-Grown-Feed in the early mornings.
In the Fall, nature offers wonderful high-protein wild-mushrooms that I gather for the girls!
In the afternoons my girls enjoy perusing the pasture for grasses, seeds and bugs, and then some Naturally-Grown-Scratch in the evenings.
The Eggs from Angel Song Acres are carefully "Nest-Gathered"...

...then gently washed and dried and packed in our own hand-stamped egg cartons.

My four grandsons, Deron-10, Nathan-7, Logan-5, and Aidan-3, as well as my one-year-old grand-daughter Cailyn, love to play with the hens and gather eggs when they come for a farm-visit! And I feel good when I'm making them some great breakfast tacos, just knowing they are getting some wonderful growing-spurt nutrition!

About The Eggs From "Angel Song Acres"
For those who really love eggs, let me tell you that...

...Pasture Raised Chickens Lay the Best Eggs!!!
When our girls lay their eggs they are washed and packed the very same day!
The real treat of having Pasture-Raised eggs for a meal comes when you crack it! The white is thick and buoyant; the yolk glowing orange. “And the taste!?” Well you will feel you have never tasted a “REAL EGG” before!”
I raise my chickens on pasture. That’s a fancy way of saying they roam outside every afternoon, (when the chicken hawks have finished their morning hunt and the business of egg-laying is done for the day) eating all the grass, worms and bugs they please. Their diet is supplemented with cracked corn and alfalfa. The pasture gives the yolk the bright orange color and superior nutrition. The more pasture the hens eat, the brighter orange the yolk. Pasture-raised eggs have four times more of the anti-oxidant beta-carotene, thus the bright orange color, four times more omega-3 fatty acids, twice the vitamin E and half the cholesterol.
If you have bought grocery store eggs all of your life, then you never have tasted a fresh egg. The fresher the egg, the more the white stands up. According to Hormel Foods’ website, the sell by date on a carton of eggs can be no more than 30 days after the eggs were packed. Yet an egg can be packed up to 30 days from the time it was laid. Storage conditions make a big difference. If a freshly laid egg is left at room temperature for a full day, it will not be as fresh as a week old egg refrigerated between 33° and 40°F.
There is a reason I did not use the term “free-range” when I described how I raise my hens. With “natural” and “organic” having such market appeal, producers are stretching the truth. According to one farmer, “free-range means the chickens have access to the outside. It can also mean that a door is merely left open on a large confinement house to a dirt yard.” Buyer beware!
Each year, we learn more about the benefits to human health from eating eggs, such as how egg protein could benefit those wanting or needing to diet to lose weight. And eggs can play a great part in nutrition around the world.
The value of egg protein regarding the aspects of satiety, lean tissue retention and muscle tissues accretion, is amazing! Currently one of the biggest health concerns in the western world is obesity, and protein can play an important role in helping to control this problem, through its satiety effect and ability to retain muscle tissue when you try to lose weight.
Latest research findings have confirmed that protein exerts a greater thermic effect than fat and carbohydrates. Higher protein diets increase satiety more than lower protein diets and better facilitate weight loss, i.e. they promote a greater loss of fat than muscle. Egg yolk protein have a satiety effect greater than previously predicted, and adding eggs to a low-calorie diet can enhance weight loss and increase dietary compliance.
There are at least a dozen good reasons to eat eggs: high quality protein, nutrient-dense, essential fatty acids, high in choline, lutein-rich, versatile, affordable, delicious, satisfying, convenient, can be used as a single serving and they are a great snack food!
More Great Egg Truths!
Egg-septional Egg Information I have discovered through research:
The egg shell may have as many as 17,000 tiny pores over its surface. Through them, the egg can absorb flavors and odors. Storing them in their cartons helps keep them fresh.
Eggs are placed in their cartons large end up to keep the air cell in place and the yolk centered.
Eggs age more in one day at room temperature than in one week in the refrigerator
Eggs can be kept refrigerated in their carton for at least 4 to 5 weeks beyond the pack date.
A hard-cooked egg will peel more easily if it is a week or two old before it is cooked.
To tell if an egg is raw or hard-cooked, spin it! If the egg spins easily, it is hard-cooked but if it wobbles, it is raw.
A cloudy white is a sign of freshness, not age, because of a high carbon dioxide content put in when the egg is laid.
If an egg is accidentally dropped on the floor, sprinkle it heavily with salt for easy clean up.
A greenish ring around a hard-cooked egg yolk is due to either overcooking or a high iron content in the cooking water. This can be avoided using proper cooking time and temperature, and by rapidly cooling the cooked egg.
In cooking, eggs are "the cement that holds the castle of cuisine together." because of their ability to bind, leaven, thicken, emulsify, clarify, and more in all types of recipes.
The egg yolk and white separate best when cold. Egg whites will beat to a better volume if they're allowed to stand at room temperature for 20 to 30 minutes before eating.
A fresh egg will sink in water while an older egg will stand up. As the egg gets older the air space in the egg increases causing it to float.
The stringy piece of material in the egg is not an embryo but rather a special protein called chalazae which acts as a shock absorber for the yolk so it doesn't break
Eggs contain the highest quality protein you can buy. Egg protein has just the right mix of essential amino acids needed by humans to build your own tissues. In addition, eggs have thirteen essential vitamins and minerals
Eggs contain the highest quality food protein known. It is second only to mother's milk for human nutrition.
Egg yolk is the major source of the egg's vitamins and minerals.
A large egg contains only 75 calories and 5 grams of fat.
Egg yolks are one of the few foods that naturally contain Vitamin D if they are from free-range hens.
